Move to the modern CMake project version option
...
This replaces the manual ad-hoc version variables we have used since
CMake 2.x (and GLFW 2.x lite).

Use GNUInstallDirs for install destinations
...
This has the advantage that the user may override e.g. the include
location, and the correct libdir (lib, lib64, lib/something) is
automatically determined.
Closes #1367 .
